1To make spicy Pineapple sauce: In a small bowl, combine pineapple, green onions, green pepper, cilantro, 4 teaspoons lime juice, 1/8 teaspoon salt and cayenne. Refrigerate until serving.
2To grill fish: Mix olive oil, lime juice, season to taste with salt and pepper then drizzle over fillets and lightly rub them to absorb all the seasoning. Prepare the tin foil with olive oil cover on the surface to prevent the fish from sticking then lay the fillets and put in oven for about 20 minutes at 200 degree or until skin is crispy. Serve with the spicy Pineapple sauce.
