1tbsp olive oil

2 onions, roughly chopped

3 garlic cloves, roughly chopped

700ml chicken stock, made using stock cubes

150g pack smoked turkey rashers, finely chopped

Method

  1. Place the oil and onions in a large saucepan and cook over a medium heat for 5 mins. Add in the pumpkin and cook for a further 6 – 8 mins until browned, stirring occasionally. Stir in the curry powder and cook for 30 secs before adding in the garlic and stock.
  2. Bring to the boil and simmer for 10 mins until the pumpkin or squash is tender.
  3. Whizz up the soup with a hand-held blender, food processor or liquidiser until smooth. Pour the soup back into the pan and simmer for 2 – 3 mins.
  4. This soup goes perfectly with crusty bread.

FANCY DINNER TO IMPRESS YOUR LADY ON WOMEN’S DAY 20/10

Salmon has a delicious taste, is rich in nutrition, low in fat, which makes it a top ingredient for ladies in their healthy diets. Ingredients:

2 tbsp L’Olivier extra virgin olive oil spray 30 ml

15 oz Annam Gourmet organic salmon fillet 500 grams

1/2 onion finely diced

4 cloves garlic roughly minced

1/2 tsp sweet smoked 

15 oz can diced tomatoes 400 grams

2 tbsp finely chopped parsley 8 grams

2 cups water 473 ml

2 cups Organic Semolina Spaghetti 200 grams

2 cups bagged fresh spinach chopped 100 grams

1/2 cup Greek yogurt 125 grams

sea salt & black pepper

Directions:

  1. Heat a large fry pan with a medium-high heat and add in 2 tbsp extra virgin olive oil
  2. Cut a 15 oz piece of fresh salmon into 2 fillets, season with sea salt & black pepper
  3. After heating the olive oil for 2 minutes, add in the fillets of salmon, skin side up, using a spatula push down on the fillets for 30 seconds, after 3 minutes flip to cook the other side, after a total cooking time of 6 minutes.
  4. Adding in 1/2 onion finely diced and 4 cloves garlic roughly minced, mix with the olive oil, after 2 minutes add in a generous 1/2 tsp sweet smoked paprika and quickly mix together, then add in a 15 oz can diced tomatoes, 2 tbsp finely chopped parsley and season with sea salt & black pepper, mix together, then add in 2 cups cold water and bring to a boil, then add in 2 cups uncooked penne pasta and mix around so the pasta is evenly distributed
  5. After 9 to 10 minutes and most of water has been absorbed by the pasta but there is still some water left, add in 2 cups chopped bagged spinach and the salmon, cover the pan with a lid and lower the heat to a low-medium, simmer for 4 minutes, then turn off the heat and remove the lid
  6. After letting the pasta cool off for about 1 minute, add in 1/2 cup greek yogurt at room temperature, season the yogurt with black pepper and mix everything together until well combined, sprinkle with freshly chopped parsley and serve at once, enjoy!

Chicken Hummus is a famous dish from Arabia and the Middle East, which provides an amount of protein and vitamins from whole beans. Besides, this dish is easy to eat and does not require sophisticated processing.

Ingredients:

1 can CIRIO chickpeas

1 large lemon

1 garlic clove

½ cup tahini, well mixed

¾ tsp. (or more) kosher salt

10 cranks freshly Kirum Kampot black pepper

¼ tsp. ground cumin

3 Tbsp. extra-virgin olive oil

Sesame seeds 

Directions:

  1. Start by prepping all of your ingredients: Drain 15½ oz. chickpeas in a strainer or colander and rinse thoroughly. Let drain again while you do the other prep.
  2. Cut 1 lemon in half, remove any visible seeds, and squeeze juice into a small bowl. You should have 3–4 Tbsp.
  3. Smash 1 garlic clove with the flat side of your knife on a cutting board and remove peel. Continue to mash with the side of the knife until a paste forms. (You can also grate garlic on a microplane if you have one—you’re just looking for a fine paste.)
  4. Combine drained chickpeas, 3 Tbsp. lemon juice, garlic, ½ cup tahini, ¾ tsp. salt, 10 cracks pepper, ¼ tsp. cumin, and 2 Tbsp. water in a food processor.
  5. Process until smooth, about 1 minute.
  6. With the motor running, stream in 3 Tbsp. oil, then continue to process until hummus is very light and creamy, about 1 minute longer. Taste and season with more salt, if needed.
  7. Transfer hummus to a shallow bowl, top with za’atar and/or sesame seeds, and drizzle with more oil.

Main Dish: Teriyaki “Chicken Plant-based” Stir Fry

1 ounce block firm tofu

Canola oil

Directions:

  1. Cut the tofu into bite-sized cubes. Set aside.
  2. Add ½ inch water to a pot or saucepan over medium heat. Once water is at a simmer, add the broccoli florets and cover the pot. Steam for 4-5 minutes until fork-tender. Drain and set aside.
  3. In a non-stick skillet or wok over high heat pour one tablespoon of oil.
  4. Next, add the tofu pieces. Evenly pour the soy sauce over the tofu pieces. Cook and turn tofu until golden on each side.
  5. Once the tofu is cooked, add another tablespoon of oil to the same pan. Add the broccoli, red bell pepper, and teriyaki sauce. Stir fry and cook for 4-5 minutes over high heat.

1 medium lemon, cut into wedges

Directions

  1. Preheat the oven to 325°. In a small bowl, mix flour, basil, thyme, cinnamon, salt and pepper; rub over pork.
  2. In a large skillet, heat oil over medium-high heat. Brown roast on all sides. Place roast in a shallow roasting pan, fat side up. Arrange the apple and onion around roast. Squeeze lemon juice from 1 wedge over pork; add lemon wedges to pan. Place rosemary over pork.
  3. Roast 1 to 1-1/2 hours or until a thermometer reads 145°. Remove roast, onion and apple to a serving platter; tent with foil. Let stand 15 minutes before slicing.
  4. Decorate your dish and enjoy this delicious herb-roasted pork.
