APPLE PANCAKE RECIPE YOU’LL FLIP FOR

Apple Banana & Cinnamon Pancakes

Ingredients

  • 1 banana
  • 1 Dazzle apple or Envy apple
  • 1 pear
  • 2 eggs 
  • 150 millilitres plain yoghurt (or vegan alternative)
  • 2 tablespoons milk (or soy milk, for vegan alternative)
  • 1/4 teaspoon bicarbonate of soda
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla
  • 1 package ORGRAN Apple and Cinnamon Pancake Mix
  • 1/4 teaspoon ground cinnamon

Instruction

  1. Peel and chop banana, apple and pear.
  2. Put banana, apple, pear, eggs , yoghurt, bicarbonate of soda, honey, vanilla and milk (or soy milk) into the bowl of an electric food processor or blender. Blend to combine ingredients. Pour mixture into a medium-sized bowl.
  3. Put pancake mix and cinnamon into the large bowl of an electric food mixer. Pour in blended liquid. Mix well to combine ingredients.
  4. Spray pan with cooking spray.
  5. Place 1/4 cup of mixture into the pan for each pancake with low to medium heat.
  6. Cook until bubbles appear on the surface. Turn and cook on the reverse side until golden brown.
  7. Place plastic wrap over a fine wire rack. When cooked, remove pancakes from the fry pan and place onto a wire rack. Cover with plastic wrap to prevent drying out.

Garlic-Crusted Roast Rack of Lamb

Ingredients

  • 1 head of garlic (cloves peeled)
  • ¼ cup rosemary leaves
  • ¼ cup extra-virgin olive oil
  • 2 racks of lamb, frenched (2 pounds each)
  • Salt and freshly ground pepper

Directions

Step 1

In a mini food processor, combine the garlic, rosemary and olive oil and process until the garlic is finely chopped. Season the lamb racks with salt and pepper and rub the garlic-rosemary oil all over them. Set the racks fat side up on a large rimmed baking sheet and let stand for 1 hour.

Step 2

Preheat the oven to 450°. Roast the lamb in the upper third of the oven for 15 minutes. Turn the racks and roast for 10 minutes longer for medium-rare meat. Transfer the racks to a carving board, stand them upright and let rest for 10 minutes.

Step 3

Carve the racks in between the rib bones and transfer to plates. Serve right away.

Crêpes Topped with Bonne Maman Fruit Spread 

Ingredients

  • 1 c flour
  • 1 Tbsp sugar
  • 1/2 tsp salt
  • 1 c milk
  • 1⁄2 c warm water
  • 4 eggs
  • 4 Tbsp butter, melted + more for pan
  • Variety of Bonne Maman® Fruit Spreads
  • Mascarpone cheese
  • Coconut flakes
  • Sliced almonds
  • Fresh fruit

Directions

Combine all of the ingredients except for the butter in a blender. Mix until smooth. Add butter and mix a bit longer. Let the batter rest for 30 mins.

Heat a small pan (about 8” or so) over medium-high heat until hot. If the pan is not “non-stick”, spray lightly with non-stick cooking spray. Add a tiny dab of butter to the pan and melt. Using a ladle, pour about 2 oz of crêpe batter in the pan and swirl the pan to coat. Cook until the edges start to turn golden, about 1 minute. Gently flip the crêpe and cook on the other side.

Repeat with remaining batter, stacking the cooked crêpes between layers of parchment paper.

Assemble the warm crêpes and serve with your choice of Bonne Maman® Fruit Spreads.


Chocolate Waffles With Bonne Maman Red Cherry Fruit Spread

Ingredients

  • 1 1/2 cups flour
  • 3 tbsp sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 large eggs, separated
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups whole milk, room temperature
  • 1/2 tsp instant coffee
  • Cooking spray
  • Fresh Cherries
  • Slivered Almonds
  • Bonne Maman Jam Red Cherry

Directions

Preheat waffle iron to manufacturers specifications.

In a large bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another large bowl, whisk together egg yolks, oil, milk, instant coffee, and vanilla. Add wet ingredients to dry ingredients and stir until just combined. 

Allow batter to rest for ten minutes. (Note, the batter can be prepared the night before and stored in the fridge overnight.) 

In third bowl, beat egg whites until stiff peaks form. Gently fold beaten whites into waffle batter. Spray waffle iron with cooking spray. 

Place recommended amount of batter into waffle iron and cook until the waffle is crispy and easy to remove from the waffle iron. Top with slivered almonds, fresh cherries, and Bonne Maman Jam Red Cherry to taste.

Black Tiger Prawns Grilled With Garlic Butter

Ingredients (4 servings)

  • 12 tiger prawns
  • 1 tbsp whole black peppercorns
  • ½ tbsp whole white peppercorns
  • 1 red pepper, seedless and cut into rings
  • 2 cloves of garlic, finely chopped
  • 3,5 tbsp unsalted butter
  • 1 tbsp oyster sauce
  • 1 tablespoon fish sauce
  • 1 cm ginger root, peeled and sliced
  • ½ tsp sugar
  • 2 handfuls of salad
  • 2 spring onions cut into rings
  • 1 handful of coriander leaves
  • Sunflower oil
  • Salt and pepper
  • Lime slices to serve
  • 5 chive stalks, finely chopped

Directions

  1. Place the prawns in a large bowl and add two tablespoons of sunflower oil and a little salt and pepper. Mix well and set aside to allow the marinade to soak in.
  2. Finely crush all peppercorns with a mortar.
  3. Roast the black, white and red peppercorns in a dry pan over high heat for about 1 minute until smoke rises. Then remove the pan from the heat and place the peppercorns in a small bowl or dish.
  4. Add 1 tablespoon of sunflower oil to the pan and add the peppercorns together with the garlic and chilli. Roast for 1-2 minutes.
  5. Then add the butter. Once the butter has melted, add the oyster sauce, fish sauce and ginger.
  6. Add the sugar to the mixture, stir well. Simmer the sauce until it thickens. Taste and season with salt if necessary. Set aside, but keep the sauce warm.
  7. Place the grill on medium height and grill the marinated prawns for 2 – 3 minutes on each side. Make sure that the prawns do not stay on the grill too long.
  8. Garnish four plates with chives, spring onions, coriander and the salad and arrange the prawns on top. Sprinkle it with sauce. Serve with the lime wedges.

 

Baked Red Snapper Fillet With Garlic

Ingredients

  • 8 ounces red snapper fillets about 2-3 fillets
  • 4 tbsp butter
  • 1 clove garlic minced
  • 4 drops Worcestershire sauce
  • ½ tsp Creole or Cajun Seasoning
  • ⅛ tsp fresh ground black pepper
  • 2 tsp minced fresh parsley
  • 1 tsp snipped fresh chives optional
  • 4 tbsp plain or seasoned breadcrumbs
  • 2 tbsp Parmesan Cheese freshly grated optional

Directions

  1. Place snapper fillets in a baking dish that has been sprayed with cooking spray. In a skillet, melt butter with garlic, Worcestershire sauce, Creole/Cajun seasoning, pepper, parsley and chives, if using. 
  2. Cook on low for 2 minutes to blend flavors. Brush both sides of fish fillets with the butter and herb mixture. Toss bread crumbs and Parmesan cheese in the remaining butter mixture; sprinkle over the fillets. 
  3. Bake/Grill at 400 degrees for about 12 minutes, depending on thickness of fillets, until fish flakes easily and is no longer translucent.

Roasted Vegetable Skillet Lasagna 

Harvest vegetables are the main feature of this skillet lasagna recipe. The flavor and texture of roasted butternut squash and parsnips are highlighted by lasagna sheets and baked to perfection along with ricotta and Parmigiano-Reggiano cheeses.

Recipe (8 servings)

1 box Barilla Wavy Lasagne-broken into large pieces,

1 jar Barilla Roasted Garlic sauce,

2 tablespoons olive oil,

2 cups peeled and diced butternut squash,

2 cups parsnips-peeled and diced,

1/2 teaspoon salt 1 cup part-skim ricotta cheese,

1/2 cup shredded mozzarella cheese,

1/4 cup finely shredded Parmigiano-Reggiano cheese,

Step to cook 

  1. Preheat the oven to 400° F.
  2. In a deep 12-inch skillet, heat oil in the oven for 5 minutes. Add squash, parsnips, and salt, and toss to coat; return to the oven. Roast about 25 minutes or until tender, stirring once halfway through.
  3. Meanwhile, in a large pot, bring 4 to 6 quarts of water to a rolling boil; add salt to taste and the lasagna sheets; stir gently. Cook according to package directions; remove from heat and drain well, reserving 1 cup pasta water.
  4. Remove vegetable skillet from the oven. Stir in the lasagna sheets and garlic tomato sauce. Stir in just enough of the reserved water to moisten. Top with dollops of ricotta cheese, and sprinkle with mozzarella and ¼ cup Parmigiano-Reggiano. Place in the oven for 10 minutes to heat through.
  5. To serve, sprinkle with additional Parmigiano-Reggiano cheese. 

Italian Sausage Fettuccine Recipe with Leeks

Cozy up with this Italian sausage and white wine fettuccine pasta recipe. It’s creamy and flavorful all year round!

Recipe (8 servings)

1 box Barilla® Fettuccine,

2 tablespoons extra virgin olive oil,

1 pound Italian sausage, crumbled,

2 leeks, sliced,

1/2 cup white wine,

1/3 cup Parmigiano-Reggiano cheese, grated,

2 tablespoons fresh parsley, chopped

Step to cook 

  1. Bring a large pot of water to a boil.
  2. Remove casing from sausage and brown in a large skillet with olive oil. Add leeks; cook for 3 minutes and deglaze with white wine. Cook until liquid reduces by half. Add salt, and black pepper; simmer for 5 minutes.
  3. Cook fettuccine pasta according to package directions. Drain.
  4. Add pasta to the skillet and toss with the pasta sauce.
  5. Sprinkle cheese on the Italian sausage fettuccine pasta and garnish with parsley before serving.
